Yes, you can complete and manage the Payroll of your business. 

It is however advised that you have the proper training and experience related to South African employment taxes and employment law. Failing which you can receive penalties from SARS or the Department of Labour.

If you pay any salaries (even just for yourself), then payroll and payroll compliance will be compuslory.

As the employer you will be responsbile to deduct the applicable taxes and pay it to SARS (such as PAYE).

Furthermore, Section 33 of the Basic Conditions of Employment Act requires you to provide certain information to your employees relating to their remuneration.  This gets captured on their payslips.

In general it is calculated using the applicable tax rates on the employees earnings (PAYE), UIF contributions, the employees hourly wage times the hours worked, or his/her monthly salary which is adjusted for any unpaid leave or overtime worked.

Once again it will depend on the internal structures of the company. Such as what payment cycles do they have (weekly, fortnightly, monthly), do they have a dedicated team to manage the payroll, how is the staff remunerated (based on their time, or set salary) and so forth.

In most cases payroll processing can take anything from 1 day to 2 or 3 days depending on the complexity and volumes.
